The role involves carry loaded trays and serve plated dishes to the right table; handle guest complaints and escalate to the captain or manager; punch orders through to the kitchen as a KOT (kitchen order ticket); coordinate order timing with the kitchen and the bar; follow food hygiene and allergen-handling rules; pour water, wine and soft drinks and serve from the guest's left.
