You should have: • Understanding of food-safety and HACCP basics • 2+ years' experience as a baker • Basic cake decorating and piping skills On a typical shift you will laminate puff and croissant dough by folding in the butter; monitor oven temperature and baking time for each batch; prove dough in the proofer at the right temperature and humidity; score the top of loaves before baking; grease and clean baking trays, tins and moulds.
