Your main tasks: • Sharpen and hone knives on a steel and whetstone • Portion steaks, chops and cutlets to the ordered weights • Trim fat, sinew and silver skin off the cuts • Dress the chilled counter and rotate stock by date You should have: • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling At least 2 year(s) in a similar role.
