The role involves check back during the meal and handle special requests; polish glasses, cutlery and crockery during mise en place; follow food hygiene and allergen-handling rules; pour water, wine and soft drinks and serve from the guest's left; lay table covers with cutlery, napkins, glassware and crockery.
