Requirements: • Confident knife skills and safe blade handling • Physically fit to lift carcasses and stand all day • Quick and accurate on the weighing scales and order maths You will run the band saw to cut cleanly through bone; season and marinate meat on request; stuff and link fresh sausages with casings; keep HACCP hygiene records and sanitise the block and tools; trim fat, sinew and silver skin off the cuts; break down beef, mutton and chicken carcasses into primal cuts.
