Ideal candidate: • Able to work early-morning and night shifts • 2+ years' experience as a baker • Understanding of food-safety and HACCP basics Day-to-day duties: • Proof and fry doughnuts, then glaze them • Laminate puff and croissant dough by folding in the butter • Prove dough in the proofer at the right temperature and humidity • Load and unload the deck oven with a peel • Weigh and mix flour, yeast, water and salt to the day's recipe Six days a week, one day off.
