Requirements: • Knowledge of dough fermentation and proving • Food handler / hygiene certificate On a typical shift you will grease and clean baking trays, tins and moulds; monitor oven temperature and baking time for each batch; prove dough in the proofer at the right temperature and humidity; laminate puff and croissant dough by folding in the butter; proof and fry doughnuts, then glaze them. $4,400 per month, negotiable for the right hands.
