On the job you will handle: • Monitor chiller and freezer temperatures to keep the cold chain • Trim fat, sinew and silver skin off the cuts • Debone shoulders, legs and loins with a boning knife • Run the band saw to cut cleanly through bone Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Knowledge of halal slaughter and handling where required Pay around $5,400 per month, based on your experience.
