You should have: • Quick and accurate on the weighing scales and order maths • Food hygiene / HACCP certificate • Able to identify primal cuts of beef, mutton and poultry Day to day you will trim fat, sinew and silver skin off the cuts; portion steaks, chops and cutlets to the ordered weights; dress the chilled counter and rotate stock by date; break down beef, mutton and chicken carcasses into primal cuts; keep HACCP hygiene records and sanitise the block and tools. $22 per hour, negotiable for the right hands.
