On a typical shift you will break down beef, mutton and chicken carcasses into primal cuts; keep HACCP hygiene records and sanitise the block and tools; dress the chilled counter and rotate stock by date; vacuum-pack and wrap customer orders; season and marinate meat on request; run the band saw to cut cleanly through bone. Ideal candidate: • Food hygiene / HACCP certificate • Confident knife skills and safe blade handling • Knowledge of halal slaughter and handling where required 5+ years on the tools preferred.
