Urgent requirement: we are hiring a halal butcher in Eagle County, Colorado. What we are looking for: • Food hygiene / HACCP certificate • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler Day to day you will keep HACCP hygiene records and sanitise the block and tools; debone shoulders, legs and loins with a boning knife; dress the chilled counter and rotate stock by date; take customer orders and advise on cuts and cooking; trim fat, sinew and silver skin off the cuts. 5+ years on the tools preferred.
