Requirements: • Able to stand for long hours in a hot kitchen • Knowledge of dough fermentation and proving On the job you will handle: • Check finished products for colour, crumb and weight • Keep work surfaces and equipment clean to food-safety standards • Laminate puff and croissant dough by folding in the butter • Prove dough in the proofer at the right temperature and humidity Six days a week, one day off.
