Day to day you will prove dough in the proofer at the right temperature and humidity; roll out short-crust and biscuit dough; knead and develop dough by hand and in the spiral mixer; pipe and fill cakes, pastries and cream rolls; score the top of loaves before baking; grease and clean baking trays, tins and moulds.
