Now hiring: we are hiring a sausage maker in Tippecanoe County, Indiana. You will be based in a hotel or restaurant butchery. You should have: • Able to use a band saw, grinder and sausage filler • Able to identify primal cuts of beef, mutton and poultry You will mince meat and prepare keema on the grinder; debone shoulders, legs and loins with a boning knife; monitor chiller and freezer temperatures to keep the cold chain; keep HACCP hygiene records and sanitise the block and tools; break down beef, mutton and chicken carcasses into primal cuts; vacuum-pack and wrap customer orders. $4,400 per month, negotiable for the right hands.
