You should have: • 2+ years experience working as a butcher • Physically fit to lift carcasses and stand all day On a typical shift you will break down beef, mutton and chicken carcasses into primal cuts; keep halal cuts separated and clearly handled; run the band saw to cut cleanly through bone; keep HACCP hygiene records and sanitise the block and tools; portion steaks, chops and cutlets to the ordered weights.
