Your main tasks: • Break down beef, mutton and chicken carcasses into primal cuts • Season and marinate meat on request • Monitor chiller and freezer temperatures to keep the cold chain • Weigh, price and label cuts for the display case • Trim fat, sinew and silver skin off the cuts You should have: • Clean, presentable and friendly at the counter • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate Part-time with flexible hours.
