Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Quick and accurate on the weighing scales and order maths • Food hygiene / HACCP certificate On the job you will handle: • Sharpen and hone knives on a steel and whetstone • Break down beef, mutton and chicken carcasses into primal cuts • Weigh, price and label cuts for the display case • Portion steaks, chops and cutlets to the ordered weights • Dress the chilled counter and rotate stock by date At least 6 year(s) in a similar role.
