You should have: • Knowledge of halal slaughter and handling where required • 2+ years experience working as a butcher You will run the band saw to cut cleanly through bone; keep HACCP hygiene records and sanitise the block and tools; take customer orders and advise on cuts and cooking; trim fat, sinew and silver skin off the cuts; break down beef, mutton and chicken carcasses into primal cuts.
