Urgent requirement: we are hiring a head butcher in Pulaski County, Illinois. Day to day you will keep HACCP hygiene records and sanitise the block and tools; break down beef, mutton and chicken carcasses into primal cuts; take customer orders and advise on cuts and cooking; monitor chiller and freezer temperatures to keep the cold chain; vacuum-pack and wrap customer orders. What we are looking for: • Food hygiene / HACCP certificate • Physically fit to lift carcasses and stand all day • Confident knife skills and safe blade handling 6+ years on the tools preferred.
