Great opportunity: we are hiring a meat cutter in Eddy County, New Mexico. You should have: • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling Day-to-day duties: • Keep HACCP hygiene records and sanitise the block and tools • Mince meat and prepare keema on the grinder • Vacuum-pack and wrap customer orders • Weigh, price and label cuts for the display case • Dress the chilled counter and rotate stock by date • Debone shoulders, legs and loins with a boning knife Freshers welcome — about 4 years of practice is enough.
