Ideal candidate: • Physically fit to lift carcasses and stand all day • Quick and accurate on the weighing scales and order maths • Knowledge of halal slaughter and handling where required Your main tasks: • Break down beef, mutton and chicken carcasses into primal cuts • Keep HACCP hygiene records and sanitise the block and tools • Take customer orders and advise on cuts and cooking • Monitor chiller and freezer temperatures to keep the cold chain • Season and marinate meat on request Freshers welcome — about 4 years of practice is enough.
