On a typical shift you will check fryer oil and change it when it breaks down; prepare stocks, sauces and soups from scratch; follow cleaning schedules and wash down work surfaces; plate and garnish dishes for a quick pass to service; label and date all prepped ingredients in the walk-in; chop, dice and portion vegetables, fish and meat.
