We are recruiting: we are hiring a head butcher in Madison County, Texas. You will work at a busy retail butcher's shop. What we are looking for: • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry • Knowledge of halal slaughter and handling where required On a typical shift you will keep HACCP hygiene records and sanitise the block and tools; vacuum-pack and wrap customer orders; break down beef, mutton and chicken carcasses into primal cuts; run the band saw to cut cleanly through bone; debone shoulders, legs and loins with a boning knife; stuff and link fresh sausages with casings.
