The role involves: • Weigh, price and label cuts for the display case • Season and marinate meat on request • Stuff and link fresh sausages with casings • Run the band saw to cut cleanly through bone • Debone shoulders, legs and loins with a boning knife • Break down beef, mutton and chicken carcasses into primal cuts You should have: • Food hygiene / HACCP certificate • Knowledge of halal slaughter and handling where required 1+ years on the tools preferred.
