Urgent requirement: we are hiring a head butcher in Pushmataha County, Oklahoma. You will work at a busy retail butcher's shop. On a typical shift you will dress the chilled counter and rotate stock by date; debone shoulders, legs and loins with a boning knife; monitor chiller and freezer temperatures to keep the cold chain; break down beef, mutton and chicken carcasses into primal cuts; weigh, price and label cuts for the display case; keep HACCP hygiene records and sanitise the block and tools. You should have: • Clean, presentable and friendly at the counter • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry At least 1 year(s) in a similar role.
