Vacancy available: we are hiring a counter butcher in Coleman County, Texas. You will be based in a meat processing plant. You should have: • Food hygiene / HACCP certificate • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling You will debone shoulders, legs and loins with a boning knife; stuff and link fresh sausages with casings; break down beef, mutton and chicken carcasses into primal cuts; vacuum-pack and wrap customer orders; keep HACCP hygiene records and sanitise the block and tools; mince meat and prepare keema on the grinder.
