Requirements: • Able to use a band saw, grinder and sausage filler • Able to identify primal cuts of beef, mutton and poultry Your main tasks: • Mince meat and prepare keema on the grinder • Run the band saw to cut cleanly through bone • Keep HACCP hygiene records and sanitise the block and tools • Keep halal cuts separated and clearly handled • Weigh, price and label cuts for the display case • Debone shoulders, legs and loins with a boning knife 4+ years on the tools preferred.
