Your main tasks: • Laminate puff and croissant dough by folding in the butter • Weigh and mix flour, yeast, water and salt to the day's recipe • Roll out short-crust and biscuit dough • Load and unload the deck oven with a peel • Rotate stock and follow FIFO on raw materials • Shape loaves, rolls, baguettes and buns by hand At least 4 year(s) in a similar role.
