You should bring able to identify primal cuts of beef, mutton and poultry; food hygiene / HACCP certificate; physically fit to lift carcasses and stand all day. The role involves: • Trim fat, sinew and silver skin off the cuts • Dress the chilled counter and rotate stock by date • Season and marinate meat on request • Portion steaks, chops and cutlets to the ordered weights • Vacuum-pack and wrap customer orders Freshers welcome — about 6 years of practice is enough.
