Ideal candidate: • Clean, presentable and friendly at the counter • Confident knife skills and safe blade handling Day to day you will trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone; portion steaks, chops and cutlets to the ordered weights; monitor chiller and freezer temperatures to keep the cold chain; debone shoulders, legs and loins with a boning knife.
