The role involves debone shoulders, legs and loins with a boning knife; dress the chilled counter and rotate stock by date; season and marinate meat on request; monitor chiller and freezer temperatures to keep the cold chain; run the band saw to cut cleanly through bone; trim fat, sinew and silver skin off the cuts. 5+ years on the tools preferred.
