The role involves: • Weigh, price and label cuts for the display case • Keep HACCP hygiene records and sanitise the block and tools • Sharpen and hone knives on a steel and whetstone • Break down beef, mutton and chicken carcasses into primal cuts • Stuff and link fresh sausages with casings Overtime paid at a premium rate.
