You should have: • Knowledge of halal slaughter and handling where required • Quick and accurate on the weighing scales and order maths On a typical shift you will debone shoulders, legs and loins with a boning knife; monitor chiller and freezer temperatures to keep the cold chain; break down beef, mutton and chicken carcasses into primal cuts; stuff and link fresh sausages with casings; sharpen and hone knives on a steel and whetstone; run the band saw to cut cleanly through bone.
