You should have: • Confident knife skills and safe blade handling • Knowledge of halal slaughter and handling where required The role involves weigh, price and label cuts for the display case; keep halal cuts separated and clearly handled; debone shoulders, legs and loins with a boning knife; trim fat, sinew and silver skin off the cuts; break down beef, mutton and chicken carcasses into primal cuts; stuff and link fresh sausages with casings. 5+ years on the tools preferred.
