Day-to-day duties: • Chop, dice and portion vegetables, fish and meat • Follow cleaning schedules and wash down work surfaces • Prepare the mise en place before each service • Taste and adjust seasoning for consistency • Check fryer oil and change it when it breaks down • Monitor food temperatures and run regular HACCP checks Freshers welcome — about 6 years of practice is enough.
