Ideal candidate: • Able to use a band saw, grinder and sausage filler • Comfortable working in cold rooms and chillers • Physically fit to lift carcasses and stand all day The role involves: • Season and marinate meat on request • Trim fat, sinew and silver skin off the cuts • Break down beef, mutton and chicken carcasses into primal cuts • Keep HACCP hygiene records and sanitise the block and tools • Sharpen and hone knives on a steel and whetstone At least 5 year(s) in a similar role.
