You should have: • Knowledge of halal slaughter and handling where required • Clean, presentable and friendly at the counter • Physically fit to lift carcasses and stand all day Your main tasks: • Weigh, price and label cuts for the display case • Dress the chilled counter and rotate stock by date • Monitor chiller and freezer temperatures to keep the cold chain • Break down beef, mutton and chicken carcasses into primal cuts • Sharpen and hone knives on a steel and whetstone • Keep halal cuts separated and clearly handled Freshers welcome — about 5 years of practice is enough.
