Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling • 2+ years experience working as a butcher You will run the band saw to cut cleanly through bone; sharpen and hone knives on a steel and whetstone; weigh, price and label cuts for the display case; trim fat, sinew and silver skin off the cuts. 6+ years on the tools preferred.
