We are recruiting: we are hiring a confectioner in Camp County, Texas. The job is at a café with an on-site bakery. Day to day you will check finished products for colour, crumb and weight; weigh and mix flour, yeast, water and salt to the day's recipe; laminate puff and croissant dough by folding in the butter; load and unload the deck oven with a peel; roll out short-crust and biscuit dough; prove dough in the proofer at the right temperature and humidity. Ideal candidate: • 2+ years' experience as a baker • Familiar with deck, rack and convection ovens $4,400 per month, negotiable for the right hands. Performance bonus on top of base pay.
