You should have: • Knowledge of halal slaughter and handling where required • 2+ years experience working as a butcher Day to day you will keep halal cuts separated and clearly handled; keep HACCP hygiene records and sanitise the block and tools; sharpen and hone knives on a steel and whetstone; trim fat, sinew and silver skin off the cuts.
