What we are looking for: • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes • Food handler / hygiene certificate Day to day you will prove dough in the proofer at the right temperature and humidity; grease and clean baking trays, tins and moulds; knead and develop dough by hand and in the spiral mixer; weigh and mix flour, yeast, water and salt to the day's recipe; monitor oven temperature and baking time for each batch.
