You should have: • Knowledge of dough fermentation and proving • 2+ years' experience as a baker The role involves decorate cakes with icing, fondant and fresh cream; weigh and mix flour, yeast, water and salt to the day's recipe; knead and develop dough by hand and in the spiral mixer; roll out short-crust and biscuit dough; boil sugar syrup for glazes and icing.
