Day to day you will stuff and link fresh sausages with casings; monitor chiller and freezer temperatures to keep the cold chain; break down beef, mutton and chicken carcasses into primal cuts; run the band saw to cut cleanly through bone; sharpen and hone knives on a steel and whetstone.
