We are recruiting: we are hiring a confectioner in Coles County, Illinois. You will work at a café with an on-site bakery. Ideal candidate: • Knowledge of dough fermentation and proving • 2+ years' experience as a baker • Familiar with deck, rack and convection ovens Day to day you will monitor oven temperature and baking time for each batch; weigh and mix flour, yeast, water and salt to the day's recipe; score the top of loaves before baking; decorate cakes with icing, fondant and fresh cream; pipe and fill cakes, pastries and cream rolls; knead and develop dough by hand and in the spiral mixer. 6+ years on the tools preferred.
