You should have: • Quick and accurate on the weighing scales and order maths • Able to use a band saw, grinder and sausage filler On the job you will handle: • Keep halal cuts separated and clearly handled • Stuff and link fresh sausages with casings • Monitor chiller and freezer temperatures to keep the cold chain • Dress the chilled counter and rotate stock by date • Keep HACCP hygiene records and sanitise the block and tools • Break down beef, mutton and chicken carcasses into primal cuts Freshers welcome — about 5 years of practice is enough.
