Your main tasks: • Score the top of loaves before baking • Grease and clean baking trays, tins and moulds • Knead and develop dough by hand and in the spiral mixer • Weigh and mix flour, yeast, water and salt to the day's recipe • Check finished products for colour, crumb and weight • Shape loaves, rolls, baguettes and buns by hand You should have: • Understanding of food-safety and HACCP basics • Basic cake decorating and piping skills • Food handler / hygiene certificate Freshers welcome — about 6 years of practice is enough.
