The role involves: • Season and marinate meat on request • Keep halal cuts separated and clearly handled • Weigh, price and label cuts for the display case • Debone shoulders, legs and loins with a boning knife • Run the band saw to cut cleanly through bone • Break down beef, mutton and chicken carcasses into primal cuts Requirements: • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling 2+ years on the tools preferred.
