The role involves: • Grease and clean baking trays, tins and moulds • Load and unload the deck oven with a peel • Prove dough in the proofer at the right temperature and humidity • Monitor oven temperature and baking time for each batch • Pipe and fill cakes, pastries and cream rolls You should have: • Basic cake decorating and piping skills • Familiar with deck, rack and convection ovens $7,500 per project, negotiable for the right hands.
