You should have: • Food handler / hygiene certificate • Able to lift 25 kg flour sacks Your main tasks: • Load and unload the deck oven with a peel • Roll out short-crust and biscuit dough • Prove dough in the proofer at the right temperature and humidity • Shape loaves, rolls, baguettes and buns by hand • Laminate puff and croissant dough by folding in the butter Rotating shifts.
