The role involves: • Rotate stock and follow FIFO on raw materials • Prove dough in the proofer at the right temperature and humidity • Shape loaves, rolls, baguettes and buns by hand • Score the top of loaves before baking • Keep work surfaces and equipment clean to food-safety standards • Weigh and mix flour, yeast, water and salt to the day's recipe You should have: • Food handler / hygiene certificate • Basic cake decorating and piping skills • Familiar with deck, rack and convection ovens At least 4 year(s) in a similar role. $5,000 per month, negotiable for the right hands.
